Spiced Peach Overnight Oats
I have a hard time with breakfast sometimes. Correction: I need EASY breakfast recipes and not cereal in an emergency. Or eggs every. single. day. The problem is that when I wake up in the morning, I'm in one of two camps: 1) I cannot possibly eat anything right now give me coffee, or 2) Give me coffee I need to eat alllllll the things immediately!
Neither of these are awesome or healthy.
My mission over the past year has been to do better with breakfast. It always makes feel better, helps me be more productive, keeps me from overeating later in the day, and gives me more patience for parenting (because honestly, mornings can be rough). Things like overnight oats often save me during weeks when I just can't be bothered to make eggs or plan anything that involves, you know, effort.
With peach season upon us here in Colorado, I've been obsessed with these Spiced Peach Overnight Oats. They're creamy, flavorful, and naturally sweetened with peach juices and maple syrup. Yes, it's as delicious as it sounds! I added ground flax seeds to mine, but you could add chia seeds, bee pollen, wheat germ, collagen peptides (!)...anything to give it the extra boost you need!
If you're like me and know you need something to sustain you right away in the morning but you can't handle the thought of eggs and cereal makes you feel a little crazy and not at all satisfied, this recipe is for you!
Spiced Peach Overnight Oats
makes 1 serving
prep time: 5 minutes
total time: 10 minutes
- 1/2 cup old fashioned oats (not quick cooking)
- 1/3 cup plain yogurt
- 1 tablespoon unsweetened almond butter
- 1 large peach, washed and diced (you can remove the skin if you want but it isn't required)
- 2 teaspoons maple syrup
- 1/4 teaspoon cinnamon
- 2 tablespoons ground flax
- 1 cup cashew milk, unsweetened (or other unsweetened nut milk)
- toasted coconut flakes (optional)
- In a glass jar, layer the ingredients in this order: oats, yogurt, almond butter, peaches, syrup, cinnamon, and flax. Add the cashew milk and cover the jar tightly with a lid. Shake the jar to combine the ingredients. Set the jar in the refrigerator and when you are ready to eat, top the oats with more peaches, another sprinkle of cinnamon, and some toasted coconut. Enjoy!
