Frozen Strawberries & Cream Sandwiches

Despite the fact that Minnesota has been clinging to winter with a stubbornness I don’t care for, I’m thinking about summer and sun and sweet treats to cool us down on lazy days. This recipe for Frozen Strawberries & Cream Sandwiches is one that has been in the back of my mind for a while, so when I spied some beautiful strawberries at the grocery store the other day I knew it was time to assemble these beauties! And when I say ‘recipe’, know that I mean that loosely. That’s one of the beautiful things about these light ice cream-like sandwiches- they’re breezy from every angle!

What I love about these Frozen Strawberries & Cream Sandwiches:

These sandwiches are quick and easy to assemble and result in a light, creamy, sweet and beautiful treat. Honestly, it doesn’t get much simpler than plopping a dollop of whipped topping (yes, the kind you buy in the freezer aisle) on a graham cracker with a fan of sliced strawberries. When that level of simplicity results in something pretty, that feels like an extra win to me! If you have kiddos around, they’ll no doubt love making them too.

How long do these last in the freezer?

I would recommend no more than 3-4 weeks. But they probably won’t last that long anyway…

How to make Frozen Strawberries & Cream Sandwiches:

  1. Line a rimmed baking sheet with wax paper.

  2. Break your graham crackers into squares and arrange half of them in a single layer on your baking sheet.

  3. Top each square with a dollop of whipped topping.

  4. Layer the thinly sliced strawberries over the whipped topping. MAKE SURE they are thin. If they are too thick, they are difficult to bite through when frozen.

  5. Top with another graham cracker square, pressing down slightly so the sandwich sticks together.

  6. Slide your baking sheet in the freezer for a few hours or overnight to freeze the sandwiches all the way through.

  7. When completely frozen, you can transfer the sandwiches to a sealable container or gallon zip top bag. They might get a bit sticky in a bag, so I recommend a hard sided container with a lid.

Frozen Strawberries & Cream Sandwiches

Makes 8 sandwiches

  • 16 graham cracker squares

  • 1 to 1 1/2 cups whipped topping (the kind from the freezer aisle- don’t get fancy)

  • 6 medium strawberries, trimmed and sliced VERY thinly (if they are too thick, they are hard to bite through when frozen)

  1. Line a rimmed baking sheet with wax paper and place 8 of the graham cracker squares in a single layer over the paper.

  2. Dollop some of the whipped topping on each square. You want to aim fro about 2 tablespoons but your measurements do not have to be exact.

  3. Arrange strawberry slices over the whipped topping and top each sandwich with a second graham cracker square.

  4. Transfer the sheet pan to the freezer and allow the sandwiches to hang out until frozen through, at least 3 hours and up to 8.

  5. You can move the sandwiches to an airtight container for longer storage once they are frozen.

  6. Share (if you want to) and enjoy!
